Beautiful, chocolatey cookie slab with dotted with dreamy Ferrero Rocher

Ferrero Rocher Slab


  • 300g Plain flour
  • 1tsp Bicarbonate of soda
  • 2tsp Cornflour
  • 170g Butter
  • 215g Soft light brown Sugar
  • 100g Caster Sugar
  • 2 large Egg, beaten
  • 2tsp Vanilla extract
  • 150g Callebaut milk chocolate
  • 80g Ferrero Rocher, chopped
  • Nutella spread


  1. Melt butter and set aside to cool
  2. Mix dry ingredients, flour, bicarbonate of soda and cornflour
  3. When butter has cooled, beat in sugar
  4. Beat in eggs and vanilla extract to the butter and sugar mix, just add one egg at a time
  5. Mix in dry ingredients and Callebaut chocolate
  6. Add half of your cookie mix to the baking tray
  7. Add a layer of Nutella spread on top
  8. Add the remaining cookie dough on top
  9. Bake at 170 degrees, 20-25 minutes, until pale golden brown
  10. When out of the oven put your Ferrero Rocher on top to decorate
  11. Leave on trays for 2 minutes before moving to a cooling rack
  12. Store in airtight tins (or, even better, eat immediately)
