Chocolate cookies with luxurious chunks of Galaxy chocolate
...or, why not have Peckish make them for you and deliver them to your doorstep?




  • 115 g Unsalted Butter
  • 175 g Light Brown Sugar
  • 1 tsp Vanilla
  • 1 Medium Egg
  • 235 g Plain Flour
  • 40 g Cocoa Powder
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Salt
  • 1 tbsp Cornflour
  • 200 g Chopped chunks of Terry's chocolate


  1. Preheat your oven to 190C/180C Fan/375F
  2. Mix together the Unsalted Butter and both Sugars until light and fluffy
  3. Add the Vanilla and Egg, and mix through
  4. Add the Cocoa Powder, Plain Flour, Bicarbonate of Soda, Baking Powder and Salt and mix until a thick paste/cookie dough is formed
  5. Chop up the Galaxy Chocolate to rough 1cm pieces, and fold in
  6. Split the mixture evenly into 9-10 cookies - give them plenty of space to spread
  7. Bake in the oven for 12-14 minutes – the longer the crunchier and chewier, the shorter the softer and gooier
  8. Once baked, remove from the oven and allow to cool slightly before eating
