Rich Chocolate Chip cookie topped with chunks of homemade Scottish tablet fudge

Scottish Tablet Cookie


  • 345g Plain flour
  • 5ml Bicarbonate of soda
  • 3ml Baking powder
  • 2ml Salt
  • 250g Butter
  • 300g Sugar
  • 1 extra large Egg, beaten
  • 5ml Vanilla extract
  • 2 x 150g Cadburys dark chocolate, chopped
  • 1kg Sugar
  • 1 Tin Condensed Milk
  • 250ml Milk
  • Vanilla Extract
  • 50 Butter


  1. Make Fudge
  2. Melt butter and add milk, condensed milk, sugar
  3. Boil for 20 minutes
  4. When ready add tablespoon of vanilla extract
  5. Whisk fudge for 5 minutes
  6. Let set for a few hours
  7. When cool, cut and dip pieces in melted white chocolate
  8. Sift dry ingredients into a bowl and set aside
  9. Cream together butter and suger until pale and fluffy, beat in egg and vanilla extract
  10. Gradually beat in sifted dry ingredients to form a stiff dough
  11. Stir in chopped Cadburys dark chocolate
  12. Roll dough into large walnut sized balls and place on ungreased baking trays. Leave plenty of room to spread
  13. Bake at 190 degrees, 12 - 15 minutes, until pale golden brown
  14. When out of the oven, place scottish tablet pieces on top with white chocolate at the bottom
  15. Leave on trays for 2 minutes before moving to a cooling rack
  16. Store in airtight tins (or, even better, eat immediately)
