  • 345g Plain flour
  • 5ml Bicarbonate of soda
  • 3ml Baking powder
  • 2ml Salt
  • 250g Butter
  • 300g Sugar
  • 1 extra large Egg, beaten
  • 5ml Vanilla extract
  • 2 x 150g Cadburys dark chocolate, chopped
  • Bag of Marshmallows, homemade or shop-bought


  1. Sift dry ingredients into a bowl and set aside
  2. Cream together butter and suger until pale and fluffy, beat in egg and vanilla extract
  3. Gradually beat in sifted dry ingredients to form a stiff dough
  4. Stir in chopped Cadburys dark chocolate
  5. Roll dough into large walnut sized balls and place on ungreased baking trays. Leave plenty of room to spread
  6. Bake at 190 degrees, 12 - 15 minutes, until pale golden brown
  7. Leave on trays for 2 minutes before moving to a cooling rack
  8. Blow torch a marshmallow while sitting on one cookie until carmelised
  9. Put another cookie on top and squish it until the marshmallow oozes out the sides
